Brinjal Spicy Fry
Brinjal _ 3
Onion _ 1 medium size finely sliced
Garlic _ 3 crushed
Tomato _ 1 medium size finely chopped
Chilly powder _ 1 tsp.
Coriander powder _ 3/4tsp
Sambar powder _ ½ tsp.
Salt _ 3/4tsp ( to taste )
Seasoning
Mustard seeds _1/4tsp
Jeera _ 1/4tsp
Split uraddal _ 1/2tsp
Curry Leaves _ few
Oil _ 2 tsp.
Method:

1. Heat oil in a kadai,add mustard, let it splutter, add jeera,uraddal, curry leaves & crushed garlic.


2. Then add sliced onion, sauté for 2 to 3 minutes,then add sliced brinjal.

3. Fry for 2 minutes . Now add sliced tomato,fry till the tomato turn mushy.Add salt and the spice powder.Stir well.Add little water.

4. Fry for 5 minutes ,Garnish with curry leaves and chopped coriander leaves.

5. Serve with hot rice, sambar, rasam & curd.
