Carrot And Coconut Burfi
Carrot – 1/2kg ( 3)
Coconut – equal to carrot quantity
Walnut – 10
Sugar – 1cup
Ghee – 2tsp
Method:
1. Grate the carrot and set aside.
2. Dessicate the coconut and set aside.
3. Heat pan with 1tsp ghee,addthe grated carrot, fry till the carrot gets cooked, set aside.( low flame )
4. Now in the same pan, add 1tsp ghee& add dessicated coconut, fry till it turns light brown .( low flame )
5. Now add the carrot,one cup sugar and mix well.( medium flame )
6. Stir contionously for 10 to 15 minutes to dissolve sugar.
7. Mean while crop the walnut and add it to the mixture.
8. Mean while grease the pan or plate with ghee, set aside.
9. When the ghee separates, transfer it to the greased pan.\
10. Press with the ladle and cut in desired shape.
11. Allow it to cools completely and enjoy the SWEET.
