Peerkankai Sambar ( Ridge guard )

Peerkankai                                  – 1

Tomato                                       –  1

Turmeric powder                        – 1/4tsp

Sambar powder                            – 11/2tsp

Tamarind                                      – 1lemonsize

Fenugreek seeds                            – 1/2tsp

Hing                                               – 1/2tsp (generous pinch )

oil                                                   –  1/2tsp

Tuvardal cooked                             – 4 tbsp

Salt                                                  – as required

Seasoning:

Mustard seeds                          – 1/4tsp

Jeera                                         – 1/4 tsp

Hing                                          – 1/4tsp

Curry leaves                               – few

Oil                                              – 1/2 tsp

Method :

  1 )  Heat a kadai with 1/2tsp oil, add 1/2 tsp fenugreek seeds, small pinch of

compound hing,  let it splutter, add sliced ridgeguard ,saute for 2 minutes.

  2) After, now add 11/2tsp sambar powder, turmeric powder,salt, mix well.

Add 1/2 tumbler  water.

   3) Let this boil, till the veggies cooked. Now add tamarind juice ( tamarind juice

extracted from lemon size tamarind.

    4  ) Add cooked tuvardal and mix well. Let it boil for 4 to 5 minutes.

    5 )  Now season with mustard  seeds, jeera and curry leaves.

    6 )    Serve with Hot Rice  .

Note :

1  ) After slicing the ridgeguard, taste  a small piece of the vegetable to check whether

it is bitter, if it is bitter, donot use it.
