Ingredients:
Brinjal – 1/4kg
Big Onion -2
Tomato puree – 1 cup
Ginger garlic paste -1 tbsp
Green chilly -2
Turmeric powder – 1/4 tsp
Red chilly powder – 1 1/2 tsp
Coriander powder – 1 1/2 tsp
Salt – As Required
Oil – 3 tbsp
Seasoning;
Cinnamon – 1 inch stick
Cloves – 2
B ay Leaves – 4
Star Anise – 1
Marati Moggu – 1
Fennel seeds – 1/4 tsp
Cumin Seeds – 1/4 tsp
Procedure:
1 . Heat 3 tbsp oil in a kadai, add the ingredients given under Seasoning.
2. Add the brinjals cut lengthwise, allow the brinjal to cook for few minutes.
3 . Add slit green chillies, ginger garlic paste, one onion finely chopped and
one onion made into fine paste.
4. Once the raw smell goes off , add the tomato puree and saute for five minutes.
5 . Now add the spice powder ( turmeric powder, Red chilly powder,Coriander
powder ) ,add salt, mix well.
6. Add little water as per the consistency you prefer and allow the gravy
to boil till the raw smell goes off.
7. Swith off the flame , garnish with coriander leaves.
8. Serve with plain Vegetable biryani or Any Pulao.
NOTE:
Fresh brinjals gives great taste to the gravy.
Shallots can be used instead of onions.
