Coconut Barfi

Coconut Barfi

Ingredients:

Coconut -4 cups

Sugar – 4 cups

Elachi powder -1 tsp.

Ghee – 8 tsp.

Method:

Heat a thick bottom kadai/ pan . Add 1tbsp ghee,

Add grated coconut and Roast for 2 to 3 minutes

in low flame.

The coconut shouldnot change colour, Transfer it

to a plate.

In the same kadai / pan, add in sugar and little water

To dissolve the sugar.

Boil till the sugar syrup achieves one string consistency.

Now add Roasted coconut and give a nice mix.Add 1/2tsp Cardamom powder and add remaining ghee.

Slowly the mixture will start to thicken, as shown in the

Picture.

Transfer to a plate /tray greased with ghee.

Make desired shapes when the mixture is warm.

Allow to cool completely . Once its completely cool,

Our barfi is ready to be served.

Note:

Use freshly grated coconut , without grating the brown

part for a perfect coconut barfi.

Cut the burfi into shapes of desired choice , before they

Cool down and harden completely. It is easy to cut the

Barfi when the mixture is warm.
