Palakkeerai Rice

Palakkeerai Rice:

Palakkeerai – 1 bunch

Cooked Rice – 1 cup

Grind to Paste :

Grated coconut – 2tsp

Green chilly – 2

Jeera – 1/2tsp

Ginger – 1/2inch

Cashew – 10

Seasoning:

Mustard – 1/2tsp

Jeera – 1/2tsp

Split uraddal – 1tsp

Channadal – 1tsp

Cinnaman – 1

Bayleaf – 1

Redchilly – 1

Roasted groundnut – 2tsp

Oil – 3tbsp

Method:

Heat 1tsp pil in a oak, add the washed green leaves and sauté for 2 minutes, till they change colour and shrink. Allow it to cool and grind it to a fine paste.

Now in the same oak , add 3tsp oil, splutter the mustard seeds, add jeera, split uraddal, channadal,cinnamon, bayleaf,redchilly and groundut.

Once the groundnut get roasted, add the palak paste along with the groundpaste given under grind to fine paste.

Saute well ( till the raw smell goes ).

Add the cooked rice, give a nice mix, add required salt. Serve with papad, potato fry.
