Brinjal Kozhavari

Brinjal                      – 1 big size

Shallots                    – 10 nos finely chopped ( optional)

Garlic                        –  8 pods  ( optional)

Tomato                     –  1  medium size  ( optional)

Salt                           –  to taste

Seasoning:

Mustard                       _ 1/4 tsp

Jeera                            _1/4 tsp

Split urad dal               _1/2 tsp

Green chilly                 _ 2 or 3  split

Oil                                 _ 2 tsp 

Method::

  1. Apply oil over the big brinjal and roast the brinjal over fire till the skin turns black.

  3. Now remove the skin completely.Mash the inner contents of the brinjal and set aside.

  5. Finely chop the shallots,garlic and  tomato. Heat  1 tsp oil in a pan or kadai, splutter  mustard seeds,jeera uraddal and split chillies.

  6. When the dal turns  light brown,add the finely chopped shallots and garlic.After 2 minutes , add chopped tomatoes,add salt and add  3 tbsp water and the mashed brinjal. Stir  for 2 minutes.

  7. Serve hot with roti / dosa  /  rice.

  8. Note:

  • You can add tamarind water before adding the brinjal.This step is completely optional.
