Green Pepper Sambar
Green pepper -200grams
Sambar powder – 3/4tsp
Turmeric powder – 1/2tsp
Garlic Pods – 10 (optional)
Hing – 1/2tsp
Jaggery -small piece
Cooked tuvardal – 3tbsp
Tamarind -small lemonsize
Salt – as required
Seasoning:
Mustard seed -1/2tsp
Jeera -1/2tsp
Fenugreek seed – 1/2tsp
Curry Leaves – few
Ghee – 3 tbsp
Method:
1. Heat ghee in a kadai, add fenugreek seeds, when they change colour add curry leaves,garlic pods and green
pepper. Saute till the green pepper change colour.
2. Now add sambar powder, turmeric powder, hing and salt. Mix well.
3. Add 1/2glass of water and allow the pepper to get cooked completely ,(it takes about 10 minutes)
4. Now mash thr cooked pepper ,add tamarind extract and cooked tuvardal. Mix well &allow it to boil for 5 minutes , till the raw smell goes up. Now add a small piece of jaggery, mix well.
5. Meanwhile heat ghee in a kadai, splutter mustard seeds,Jeera,Curry Leaves, Hing and add this to the Sambar.
6. Serve with Hot Rice, any porial & Papad
